Not that I’m bitter…
Recently I made oatmeal cookies using the recipe on the lid of the Quaker Oatmeal box, not realizing they had changed the recipe to use less fat. The cookies turned out less than delightful. Since I had made them as a gift for a friend, I too was less than delighted. So I dug through my recipe file… no that sounds organized. Start over here: So I dug through my recipe box and thankfully I had cut the original from the box lid years ago. This is the best!
Original Vanishing Oatmeal Raisin Cookies from Quaker Oatmeal Box
1 c. [2 sticks] butter, softened
1 c. firmly packed brown sugar
½ c. white sugar
2 eggs
1 t. vanilla
1 ½ c. plain all-purpose flour
1 t. baking soda
1 t. cinnamon
½ t. salt
3 cups Quaker Oats uncooked
1 c. raisins [optional- but then they won’t be oatmeal raisin cookies, will they?]
- Heat oven to 350 degrees
- Beat together butter and sugars until creamy.
- Add eggs & vanilla; beat well
- Add combined flour, soda, cinnamon, and salt; mix well
- Stir in oats and raisins; mix well
- Drop by rounded tablespoonfuls onto ungreased cookie sheet. [For perfect cookies, use parchment paper]
- Bake 10-12 minutes or until golden brown
- Cool 1 minute on cookie sheet; then remove to wire rack for further cooling
Hurray. I’d also misplaced my recipe from the lid of the oatmeal box. Thanks for finding it for me also!
