- 1 tomato diced
- 1/2 c. mayonaise
- 1/2 c. bacon, fried and chopped
- 1/2 c. shredded Swiss cheese
- 1 small onion diced
- 1 t. dried basil or 2 T. fresh if you have it
- 1 tube of flakey canned biscuits [10 ct.]
Spray a mini muffin tin with Pam; divide flaky canned biscuits in 3 layers each; Line muffin tin with biscuit layer making a cup; mix remaining ingredients together and spoon into biscuit cups
Bake at 450 degrees for 8-10 minutes. Wow! So easy and so yummy.
Warning: Regular canned biscuits don’t work well. Be sure to buy flakey. My friend Polly Lewis gave us this recipe and she uses Real Bacon Bits and they work fine. But I can’t eat eat Bacos and such because I am a delicate peach.
Also, do not forget that new-fangled canned biscuits pop loudly now when you pull the outside wrapper off. That scares me half to death and I almost always drop the biscuits on the floor. Just a little warning for my Life Group who gets these almost every time I host.
This picture really doesn’t do them justice. So let your nose imagine the aroma of bacon in a cheese biscuit. There ya go. Now you’re cooking.

Crystal, this makes 24, as in a mini-muffin tin full, plus a couple more. We usually make 2 more regular sized ones for me and David since I only have one mini pan. Why go out and buy another pan when you can do things the hard way? ; }
